Ursolic acid is an organic compound with molecular formula c30h48o3. It is a natural triterpene carboxylic acid and can be used as an emulsifier in food. It is hydrolyzed by saponins containing ursolic acid. In some plant raw materials, ursolic acid exists in the form of saponins. The saponins must be hydrolyzed before they can be extracted and separated by solvent. Saponins can be hydrolyzed by acid or enzyme. The hydrolysis rate of saponins is related to the concentration of hydrogen ions.
