Propyl gallate, also known as Bang c acid ester, as a type of common oil soluble antioxidants have been widely used in fat and oil, fried food, meat food, pollen, food, cosmetic, etc. by gallic acid and normal propyl alcohol under the condition of acid dehydrating agent, made by heating esterification food additive gallic acid ester.
Propyl Gallate is a trihydroxybenzoic acid found in gallnuts, sumac, witch hazel, tea leaves, oak bark, and other plants.Propyl Gallate is found both free and as part of hydrolyzable tannins. The gallic acid groups are usually bonded to form dimers such as ellagic acid. Hydrolysable tannins break down on hydrolysis to give gallic acid and glucose or ellagic acid and glucose,known as gallotannins and ellagitannins respectively.
Function
Propyl gallate has been used to probe the alternative cyanidesensitive pathway for oxygen absorption in seeds of Orobanche aegyptiaca. A lens culture study of epithelial cells treated with H2 O2 has indicated that propyl gallate dismutates superoxide catalyst in form, and therefore mimics superoxide dismutase activity. Propyl gallate (1mM) has been used to probe the Arabidopsis taliana plastid oxidase activity as expressed in tobacco. A report has investigated the utility of propyl gallate with a fluorochrome-labeled group of gold / antibody probe for immunofluorescence microscopy and immunoelectron microscopy.
